Intensive Learning Program - Home Cheesemaking: Hands-On Workshop

Got Milk? In this workshop
you will learn the basics for making cheese with just a few ingredients
and your kitchen stove. Participants will make hard and soft cheeses
from start to finish including cheddar, mozzerella, ricotta, formigine
(a great spreadable cheese), and cream cheese. We will also learn
to make yogurt and kefir. The Orners will demonstrate smoking and
adding herbs to cheeses, proper sanitation and storage methods.
Participants will take home starter culture for formigine, yogurt,
and kefir. A tasty home-grown lunch will be prepared by the Orners
with produce from their farm.
Claire and Rusty Orner are stewards of the non-profit educational
facility Quiet Creek Herb Farm and School of Country Living, a 30-acre
farm where they raise vegetables, fruits, herbs, and edible and
cut flowers. Quiet Creek’s year-round classes cover diverse
topics including: cheesemaking, integrated pest management, vermicomposting,
raised beds, soil food web, herbal soap making and bread baking.
