Back by popular demand! Do you want to feed your family fresh, homemade cheese and yogurt? Are you considering incorporating value-added dairy to your farm business? This daylong intensive is perfect for the beginning cheesemaker: learn the basics for making cheese with just a few ingredients and your kitchen stove. We'll make yogurt, as well as hard and soft cheeses from start to finish including cheddar, mozzerella, ricotta, and fromagina (a great spreadable cheese). The Orners will demonstrate smoking and adding herbs to cheeses, and proper sanitation and storage methods. Participants will take home starter culture for fromagina and yogurt. The Orners will prepare a nutritious homegrown lunch with produce from their farm.
Claire and Rusty Orner are stewards of the nonprofit educational facility Quiet Creek Herb Farm and School of Country Living, a 30-acre farm where they raise vegetables, fruits, herbs, and edible & cut flowers. Quiet Creek’s year-round classes cover diverse topics including: cheesemaking, Integrated Pest Management, vermicomposting, raised beds, soil food web, herbal soap making, and bread baking.
